Spaghetti Alfredo
This is soo simple it hardly needs a recipe, but it’s another classic that my sister and I used to knock up when mum and dad were out, and there was no food in the house! It relies on store cupboard ingredients and is really really tasty.
Ingredients
2 oz butter
2fl oz single cream (light if you can)
½ cup of grated parmesan cheese
Black pepper
Spaghetti
Method
In a saucepan melt the butter and cream together on a low heat until emulsified and combined, add the parmesan and a good grinding of black pepper and heat until the cheese is melted, do not allow it to boil or it will separate. Once the pasta is cooked add it to the sauce and toss to combine. Serve with some extra parmesan on top and more black pepper if you like.
Tip: If you have some leftover vegetables like asparagus or peas, these can be cooked and added to the pasta at the end. If the asparagus is raw, put it in to cook with the pasta about 2 mins before the end of the cooking.
