Solo Soups
I do feel from experience that you are less likely to have starters and appetizers when eating alone, it does tend to be a course associated with eating out or entertaining others but sometimes its nice to have something. The nature of soup means you can cook it fresh and again freeze it in portions or make a fresh batch and eat it for a few days. It is easy to heat and serve so is a fuss free and tasty way to start a meal as well as sometimes being a meal in itself with bread and cheese as with French Onion Soup. The secret to a good homemade soup is of course stock, a stock cube will rarely suffice except in dire circumstances, the flavour is too highly concentrated and contains copious amounts of added salt. There are number of improved ready made stock cubes available now in the form of jelly capsules and stock concentrates come in a jar to which you add water. Ideally you should make your own as it is so simple and you only need the chicken or meat joint a few vegetables and some flavourings. Fish stock is also terribly easy and freezes successfully. Once you master the art of soup making, the list of options is endless, most vegetables can be made into delicious soups.
