So you know when you have those good intentions at the start of the week to eat something reasonably healthy but still want something filling and tasty. This is where my Nourish Bowl comes in. Balanced and nutritious, with brown rice for extra fibre, salmon with a tasty miso glaze, homemade hummus, and green vegetables with peanut rayu!
Ingredients
1 - 2 Organic Salmon Fillets (most packs contain two pieces - it’s delicious cold the next day for lunch.
1tbsp Miso Paste
2 tsp honey
1 pouch of Microwave brown rice
A portion of green vegetables (I used broccoli)
1 tbsp Peanut Rayu
Hummus
1 tin of organic chickpeas
1 clove of garlic
1/2 lemon squeezed
1tbsp Tahini
2tbsp olive oil
a little ice-cold water
Method
It hardly needs a recipe, but in any case, start by preparing the salmon. Mix the miso paste with honey and spoon it over the salmon. You can either roast the salmon on a tray in a conventional oven at 180 fan for 10 mins or in an air fryer as I do for about 6-8 minutes. I like to do salmon slightly under so it doesn’t get dry and overcooked.
For the Hummus, blitz the chickpeas, garlic, tahini and olive oil in a food processor until smooth; add the lemon juice and seasoning. If it needs a little thinning, add the ice-cold water and blitz again. It should be thick but light and fluffy. Note the hummus keeps really well in the fridge for about a week.
Cook the green veg until al dente and, while still warm, toss it in the peanut raita. Now all you have to do is assemble everything and enjoy!
